Ingredients:
1 handful spinach
½ banana
½ apple, cored and cut into pieces
¼ cup sweet potato, peeled and cut into chunks
Directions:
Handful of berries
1 heaping teaspoon almond butter
DIRECTIONS
Blend all ingredients in order listed in a high-speed blender.

Nuts like almonds, Brazil nuts, hazelnuts, cashews, and seeds
all make delicious milks.
Some decades ago, for most Americans the only milk choices were whole, 2%, or skim.
Back then milk came mostly from cows. Mooo … ve over cow, it’s about time you got a
much-needed rest. If you’ve seen any happy cows lately, it’s because times have changed,
the choices have widened, and cow’s milk is being replaced with alternative milks.
Milkshake smoothies are simply delicious when made with a base of nut or seed milks.
Raw nut milks can also be used to make ice creams, pies, cream sauces, and nut-based
dairy-free cheeses. These milks can also be used on cereals or in lattes.
About the New Milks
Nut and seed milks are easy to make at home, and make a perfect base for smoothies
(see pages 185, 186, 190 for recipes). If you are lactose intolerant or have vegan dietary
restrictions, it is in your best interest to learn how to make your own milks. Almond milk
has become the most popular alternative to dairy or soymilk. It contains fewer calories
than dairy or soy milk, has no saturated fats or cholesterol, and supplies about 25 percent
of our daily vitamin D and about half of our vitamin E. If you are buying almond milk at
your supermarket and not making it at home, be sure to read the label for sugars, salt, or
other additives. Remember that almond milk purchased at your supermarket is industrially
processed. If you purchase almond milk at a supermarket, look for unsweetened organic
varieties.
Although soymilk has a protein value that is close to cow’s milk, soy itself is not
without its controversy. In recent years claims have been made that link phytoestrogen-
rich soy to increased risks of breast cancer. Other research shows that soy is disruptive to
our hormones because soy is one of the most genetically modified foods on the market
today. Soy is heavily sprayed with chemicals, and because of these chemicals, soy is
grown in depleted soils. Consumers with gastritis or irritable bowel syndrome should stay
away from soy as it can cause bloating. People with tumors and hormonal issues should
also stay away from soy. If you are going to buy soy milk, consume it in moderation and
choose unflavored, organic varieties.
