Erythritol Peanut Butter Cookies
Erythritol Peanut Butter Cookies
Ingredients:
1 cup granulated erythritol
1 large egg, lightly beaten
1 teaspoon vanilla extract
Directions:
1⁄ teaspoon baking soda

1. Preheat oven to 350°F.
2. In a medium-sized bowl, beat together peanut butter and butter until combined and
fluffy.
3. Add granulated erythritol, egg, and vanilla extract and mix until combined.
4. Stir in baking soda and salt.
5. Drop by tablespoonfuls onto an ungreased cookie sheet.
6. Bake for 10 minutes, or until lightly browned.
Chocolate Ice Cream
This recipe calls for the use of an ice-cream maker, but not having one isn’t a
deal-breaker. Instead of using an ice-cream maker, you can stir the mixture in the
bowl every 30–45 minutes while it cools in the refrigerator.
