Baby Spinach and Prosciutto Salad
Ingredients:
8 cups baby spinach
12 ounces prosciutto
2 large avocados, diced
Directions:
1⁄ cup diced red onion

1⁄ cup chopped raw, unsalted cashews

1⁄ cup Avocado Italian Dressing (see recipe in Chapter 9)

Be Choosy with Nuts
When buying nuts, opt for raw, unsalted varieties rather than roasted, salted, or sugared versions. Raw
nuts generally contain no added ingredients, while roasted, flavored nuts can contain unhealthy oils and
sugar.
1. Put spinach in a large mixing bowl. Dice prosciutto and put on top of spinach. Put
diced avocado, red onion, and chopped cashews on top of spinach.
2. Add dressing to salad and toss to coat. Serve immediately.
Gorgonzola Steak Salad
The combination of Gorgonzola crumbles and blue cheese dressing makes this
salad taste like a decadent treat.
