Yellow Onion Frito And Chili Casserole
Ingredients:
3 cups corn chips
1 large yellow onion, chopped
1 cup grated American cheese
Directions:
1 19-ounce can chili con carne
1. Preheat oven to 350°F.
2. Treat a deep-dish pie pan with nonstick cooking spray. Spread 2 cups of the corn
chips over the bottom of the pan. Distribute the onion and 1⁄ cup of the cheese

over the top of the corn chips, and then top them with the chili. Add the remaining
corn chips and cheese over the top of the chili. Bake for 15–20 minutes, or until
the casserole is heated through and the cheese is melted.
SALISBURY STEAK IN ONION GRAVY
Serve as an open-faced sandwich or with mashed potatoes. Add a salad and steam-
in-the-bag peas.
Yields 6–8 servings
1 103⁄-ounce can condensed onion soup

11⁄ pounds lean ground beef

1⁄ cup dry bread crumbs

1 large egg
Salt and freshly ground pepper to taste
1 tablespoon all-purpose flour
1⁄ cup ketchup
4
1⁄ cup water
4
1 teaspoon Worcestershire sauce
1⁄ teaspoon prepared mustard

1. In a bowl, mix together half of the soup with the beef, bread crumbs, egg, salt,
and pepper. Shape into 6–8 patties.
2. Add the patties to a deep 31⁄-quart nonstick skillet or electric skillet; brown on

both sides over medium-high heat, then pour off any excess fat.
3. Mix the remaining soup together with the remaining ingredients. Pour over the
patties. Cover and simmer on low heat, stirring occasionally, for 20 minutes, or
until the meat is cooked through and the gravy is thickened.

After you brown the meat patties, remove them from the pan and add a
thawed 12-ounce package of frozen hash brown potatoes to the skillet. Place
