Fine Shredded Zucchini Fritters
Fine Shredded Zucchini Fritters
Ingredients:
1 pound zucchini, grated
½ teaspoon fine sea salt
¼ cup shredded carrot
1 teaspoon dried parsley
1 garlic clove, minced
¼ teaspoon ground black pepper
½ cup plain soy yogurt
½ cup unbleached all-purpose flour
2 tablespoons canola oil, optional
Directions:
Thoroughly combine the grated zucchini, salt, carrot, parsley, garlic, black pepper,
and yogurt in a large bowl. Add the flour and stir until completely combined.
Directions for pan-frying
Warm a skillet over medium to medium-high heat and add the canola oil or spray with
nonstick cooking spray. Form a little less than ¼ cup of the zucchini mixture into a ball
and carefully drop into the oil. Repeat with the remaining zucchini mixture, leaving
about 1½ inches between each ball, then flatten each fritter with a spatula. Fry until
golden on both sides, about 3 to 4 minutes per side.
Directions for baking
Preheat the oven to 425°F. Line a baking sheet with nonstick foil or parchment paper
and spray with nonstick cooking spray.
Form a little less than ¼ cup of the zucchini mixture into a ball and place on the
prepared baking sheet. Repeat with the remaining zucchini mixture, arranging the balls
in a single layer on the baking sheet with about 1½ inches between them. Flatten each
fritter with a spatula then spray with cooking spray. Bake until the fritters are golden
and crisp around edges, about 30 minutes.

There are some things that just aren’t the same without a little oil in them, and
fried green tomatoes is one of them. I wouldn’t dare disturb this southern classic by
baking it or using cooking spray to pan fry it. Besides, at only 178 calories
