The Basics
THERE ARE TWO dishes that every vegan needs to know how to prepare: seitan and
tofu. You don’t need to master every variation of seitan that exists, but having a few
basic recipes under your belt will go a long way towards creating flavorful, filling,
low-calorie meals. Here I offer you a few of my favorite seitan and tofu preparation
styles that are used throughout the book, from spicy seitan-based sausages to savory
roasted tofu.
Roasted Tofu
MAKES 14 OUNCES OR 4 SERVINGS
I was a vegetarian for nearly four years before I found a recipe for tofu that I really
liked, and I was a vegan for a full year before I began to really love tofu. The secret
to beginning your love affair with tofu is to marinate it and roast it. In my opinion
you can never marinate tofu long enough. I’ve set this marinated tofu in the fridge
overnight with every intention of roasting it in the morning to throw on a Chef’s
Salad () for lunch, and then completely forgotten about it for the entire
day! According to my taste buds, this is one of the happiest mistakes I could ever
make. When it comes to roasting, however, you can definitely overdo it. Too long in
the oven, and you have a dense, rubbery substance that resembles the texture of
chewing gum more than a savory topping. Start checking on your tofu around 10
minutes—go ahead and pop one in your mouth to test the texture. Then you can
gauge whether you’ll roast for 5 more minutes or 10.
