Pine Nuts Cilantro Pesto

Ingredients:
1 tablespoon pine nuts
2 large cloves garlic, crushed
1 teaspoon lime juice

This recipe will come out best when using a pizza stone, as well as a pizza
peel to transfer the pizza to the oven. You can also use 1 large or 2 small
sheet pans, turned upside down and lightly oiled. If you have a pizza stone,
center it in the oven and heat at 500°F for 1 hour before baking the pizzas.
Follow the directions on the pizza dough package so that the pieces are
ready to be rolled out and baked about 30 minutes after the marinated beef
comes off the grill and the salsa and pesto have been prepared.
1. Do ahead: Make the Carne Asada Marinade by whisking together all the
ingredients. Cover and refrigerate until ready to use. It may be made 2 days ahead
of time.
2. Do ahead: To make the Salsa, combine the tomatoes, onion, half the minced
serrano pepper, and 1 tablespoon of the chopped cilantro in a small bowl. Add
the olive oil, garlic, lime juice, and salt. Stir until just blended. Cover and
refrigerate until ready to use. It may be made at least 2 days ahead of time.
3. Do ahead: Make the Cilantro Pesto the same day you make the pizza, at least 2
hours ahead of time. Combine 1/ cup cilantro, the remaining serrano pepper, pine

nuts, garlic, lime juice, salt, and olive oil in a blender. Pulse until well ground.
Add the Parmesan cheese and pulse again until well blended. Cover and
refrigerate until ready to use. You should have enough chopped cilantro left over
to sprinkle on the pizzas after they are baked.
4. Combine the sliced beef with the Carne Asada Marinade and refrigerate,
covered, for 1 hour.
5. Light a charcoal barbecue or heat a gas grill to medium. Clean the grate and
coat it with vegetable oil.
6. Grill the beef 3 to 4 minutes per side, depending on how thick the slices are.
Let the beef cool, then chill for about 15 minutes. Slice the beef into 1/ -inch-

thick strips and refrigerate until ready to use.
7. If you are using sheet pans, preheat the oven to 500°F. Spread a little olive oil
over the sheet pans and put them in the hot oven 10 minutes before baking the
pizzas.
8. Sprinkle a work surface with the all-purpose flour and roll out the balls of
