Peanut Confectioner For the filling

Ingredients:
½ cup peanut butter
3 cups confectioners’ sugar
4 tablespoons whole milk
2 tablespoons honey
1 teaspoon vanilla extract

Directions:
1. Preheat the oven to 350°F.
2. In a large mixing bowl, with an electric mixer set on medium speed, beat the butter,
granulated sugar, and brown sugar until creamy. Beat in the eggs, one at a time, then
mix in the chopped Reese’s Peanut Butter Cups, peanut butter, and vanilla.
3. Add the flour, baking soda, and salt. Stir by hand until well blended.
4. With your hands, roll the dough into 1-inch balls. Arrange the cookies on a large
nonstick baking sheet, leaving about 1½ inches of space between them. Bake the
cookies for 8 to 10 minutes, or until they are set and golden brown. Remove the
cookies from the oven and, using a spatula, transfer them to a wire rack to cool.
Repeat with the remaining dough.
5. Make the filling: In a large mixing bowl, with an electric mixer set on medium
speed, beat the peanut butter, confectioners’ sugar, milk, honey, and vanilla extract
until smooth and creamy.
6. To assemble the cookie sandwiches, turn one cookie flat side up and spread with
about 1½ teaspoons of filling. Top with another cookie, with the flat side facing the
filling. Continue to make cookie sandwiches until all the cookies have been used.
PEACH COBBLER
This dessert is actually better when it’s made with frozen peaches, which have less
water than fresh, and which really take on the flavor of the other ingredients.
