Banana Applesauce Layer Cake with Apple Cream Cheese Frosting

Ingredients:
Cake:
Bananas
Flour
Baking soda
Cinnamon
Nutmeg
Applesauce
Vanilla
2 egg whites
Cooking spray or butter and flour, for the pans

Frosting:
1 cup (8 ounces) cream cheese, softened
1/4 cup (2 ounces) cinnamon applesauce
1 teaspoon pure vanilla extract

Directions:
1. Mash the bananas in a medium bowl.
2. In a large bowl, mix the flour, baking soda, cinnamon and nutmeg.
3. Add the bananas, applesauce and vanilla to the flour mixture and mix just until incorporated.
4. Beat the egg whites until stiff peaks form and fold in carefully.
5. Spray two 8- or 9-inch round pans with cooking spray (or butter and flour them) and spread the batter in the pans.
6. Bake at 400°F for 20 minutes. Cool.
7. Cut out 4 small rounds with an overturned 16-oz round container.
8. For the frosting, whisk the cream cheese with the applesauce and vanilla until creamy.
9. Spread 2 tablespoons frosting between each layer, stack, cover the cake with the remaining frosting and decorate as desired.

Note:
Double the frosting ingredients for more frosting.
