Honey Coconut Blueberry Bran Muffins

1 cup wheat bran
1-1/2 cups white entire wheat flour
1/3 cup sweetened shredded coconut
1/4 cup chopped walnuts
1 tsp baking powder
1 tsp baking soda
1 cup unsweetened vanilla almond milk (or skim is fantastic)
1/2 cup honey
1 tsp vanilla
3/4 cup unsweetened applesauce
2 tbsp coconut oil (or canola)
2 large eggs, crushed
12 oz blueberries

Directions:
Preheat oven to 400°F. Line a muffin tin with 16 liners.
Blend the wheat bran, wheat flour, baking soda and baking powder. Stir inside outrageous and coconut.
In a different bowl, add applesauce, almond milk, honey, coconut oil, vanilla and egg. add to dry ingredients and stir accurately until moistened. Fold within blueberries.
Spoon into paper-protected muffin cups and bake for 18-20 minutes, or until a toothpick inserted will come out fresh.
Makes 16 muffins.
