Passion Pisco Sour
Ingredients:
2 ounces pisco (South American sugarcane rum)
1 ounce Simple Syrup
1 ounce fresh lemon juice
1 large egg white
Directions:
Juice from 1 small passion fruit, strained
Bitters, for garnish
1. Fill a cocktail shaker with ice. Pour in the pisco, simple syrup, lemon juice, egg
white, and passion fruit juice. Cover and shake well, until the shaker is fogged with
cold moisture.
2. Strain into a martini glass; sprinkle a few drops of bitters on the foamy top.

Don’t fill the glasses with ice cubes in advance; they’ll melt and water
down this very flavorful concoction. Choose the most fragrant nectarines
and plums at the market.
