Simple Blueberry Sauce
Simple Blueberry Sauce
Ingredients:
2 cups blueberries
3 tablespoons organic cane sugar
1 tablespoon freshly squeezed orange juice
Directions:
Bring all the ingredients to a boil, reduce the heat, and simmer for 10 minutes. Let the
sauce cool—it will thicken as it does so. Use to top Blueberry Cheesecake Bites.
Gluten-Free Raspberry Swirl Cupcakes
makes 18 cupcakes
I swear, you wouldn’t know these cupcakes are gluten-free if I hadn’t told you (although I
guess you’d figure it out by the ingredients list). They are dense, moist, and not too sweet.
The addition of pureed raspberry gives a zip that is complemented by the sweet cream
cheese frosting. Even non gluten-free folks should give these a whirl! And note, while
there’s only ½ teaspoon xanthan gum in the recipe, please don’t exclude it or you may not
be happy with the end result.
