Whipped Citrus Zest Butter

Ingredients:
1 cup (2 sticks) unsalted butter, softened
1 tablespoon lemon zest
1 tablespoon orange zest
1 tablespoon freshly squeezed orange juice
1 tablespoon raw honey

Directions:
Place all the ingredients in the blender jar and run for 5 to 10 seconds or until thoroughly
mixed. Store in the refrigerator in an airtight container for up to one week.
Quick Strawberry Spread
makes 1¼ cups
When I was living in Norway, a friend said, “I’ll make a quick jam for breakfast.” How’s
she going to do that? I thought. Within minutes she placed strawberry jam on the table.
This sweet spread that epitomizes fresh berries is a version of her recipe. I’d like to call it
jam but hesitate to do so because it is most likely not what you traditionally think of as
jam. There is no canning or pectin involved, so it’s a little runnier than classic American
jam. The downside is that the spread will only last in the fridge for about a week. The
upside: You can have it in minutes.
