Smooth Almond Butter
Smooth Almond Butter
Ingredients:
3 cups raw almonds
2 tablespoons coconut oil, melted, plus more for rubbing the sides
Directions:
Soak the almonds for 8 hours or overnight. Drain and rinse the nuts, then spread them on a
parchment-lined baking sheet in a single layer. Bake them in the oven for 1½ hours at
300°F or until they are completely dry.
Rub the inside of the blender jar with melted coconut oil. Place the nuts in the blender
with the oil and run on low for 10 seconds. Then turn the blender to high and run for
approximately 2 more minutes until the nuts become smooth and creamy.
Rich Coconut Butter
makes 1 cup
Spread this tasty tropical treat on toast in place of cow’s butter, or use a spoonful in
smoothies or sauces. One tablespoon contains two grams of fiber!
4 cups unsweetened coconut flakes (12-ounce package such as Bob’s Red Mill)
Place the coconut flakes in the blender and run for 30 seconds on medium speed. Using a
spatula, scrape down the sides and bottom of the blender jar, pushing the coconut toward
the blade.
Run the blender on high for 2½ minutes or until the mixture becomes smooth and creamy.
Store in a jar at room temperature for up to three months (if you don’t eat it sooner!).
Whipped Citrus Zest Butter
makes about 1 cup
With just a little zest and sweetener, you can transform butter into something unexpected.
It’s divine spread on Zucchini Apple Muffins (). Try it on scones, too.
