Spicy Penne with Shrimp and Bacon

Yield: 4 servings

Ingredients:
12 ounces (340 g) penne or other short pasta
1 tablespoon (14 ml) olive oil
6 strips (1 1/2 ounces, or 43 g) precooked bacon
1 cup (130 g) prechopped onion
1 tablespoon (10 g) minced oil-packed garlic
1/4 teaspoon crushed red pepper flakes
1/2 cup (120 ml) dry white wine
1 pound (455 g) medium peeled and deveined shrimp, thawed if frozen
1 1/2 cups (375 g) refrigerated or jarred tomato sauce with onion and garlic

Directions:
1. Cook the pasta according to the package directions.
2. Meanwhile, heat the oil in a large skillet over medium heat. Cook the bacon until sizzling, about 2 minutes. Drain on paper towels.
3. Increase heat to medium-high. Cook the onions until golden, about 4 minutes. Add the garlic and pepper flakes and cook 1 minute.
4. Add the wine and shrimp and simmer until the shrimp begin to turn pink, 1-2 minutes. Add the tomato sauce and cook until heated through and the shrimp are pink, 2-3 minutes.
5. Drain the pasta and toss with 3/4 cup of the sauce. Divide among plates, top with the shrimp and remaining sauce, and crumble the bacon over each serving.
