Asian-Style Flatbread
Asian-Style Flatbread
Ingredients:
1 package (¼ ounce) or 1 scant tablespoon active dry yeast
1 cup warm water (105° to 115°F)
2 cups all-purpose flour ½ teaspoon salt
1 tablespoon toasted sesame oil, plus additional for cooking
½ cup finely chopped green onions (scallions), including the green tops
Directions:
IN A BOWL, sprinkle the yeast over the warm water. Stir in 1 cup of the flour and the
salt. Beat with a spoon or small hand mixer until the mixture is very smooth. Stir in the
1 tablespoon oil, the green onions, and enough of the remaining flour to make a
smooth, slightly stiff dough.
Divide the dough into 8 portions. Cover with plastic and let rest for 30 minutes. Form
the dough into balls. On a lightly floured board and using a rolling pin, roll the balls
into 8" rounds.
Place a nonstick skillet over medium-high heat. Brush the skillet with some sesame oil
and heat until hot but not smoking. Cook the discs, one at a time, until golden, about 2
minutes per side. Transfer to a plate and cover with waxed paper or foil to keep
warm. Serve warm.

ORANGES FOR BEST RESULTS.
