Parmesan Garlic Bread

Ingredients:
2 sticks (8 ounces) butter, at room temperature
2 cloves garlic, minced
½ cup finely chopped fresh parsley or 2 tablespoons dried
½ cup grated Parmesan cheese
1 loaf (about 1½ pounds) Fresh Baguette or store-bought Italian bread, cut into 1"-thick slices

Directions:
IN A SMALL BOWL, mash together the butter, garlic, parsley, and Parmesan until well
blended.
Preheat the oven to 350°F. Spread both sides of each slice of bread generously with
the butter and fit the slices together to reshape the loaf. Wrap in foil and bake for 15
minutes. Serve warm.

GRILLED A SALMON FILLET, THERE IS SOME LEFT OVER, AND THAT’S USUALLY WHEN I MAKE
THIS CREAMY SALMON CHOWDER. THE IMPORTANT THING HERE IS TO NOT OVERCOOK THE
SALMON, SO I ADD IT TO THE POT AT THE VERY END. IN A PINCH YOU CAN USE CANNED
SALMON, WHICH, OF COURSE, IS ALREADY OVERCOOKED—BUT IT IS HANDY IF YOU’RE
COOKING A LAST-MINUTE LUNCH OR SUPPER.
