Peanut and Sweet Potato Stew
Peanut and Sweet Potato Stew
Ingredients:
2 tablespoons olive oil
1 medium onion, chopped
2 fresh jalapenos, seeded and minced
2 teaspoons minced fresh ginger
2 cloves garlic, minced
2 teaspoons ground cumin
1/4 teaspoon ground cinnamon
1/8 teaspoon crushed red pepper
1/4 teaspoon ground coriander
2 large sweet potatoes, peeled and cubed
1 (28-ounce) can diced tomatoes
1 pound fresh green beans, trimmed and cut into bite-sized pieces
2 cups vegetable broth
1/4 cup natural peanut butter
Freshly ground black pepper, to taste
Directions:
In a large Dutch oven or soup pot, heat the oil over medium heat. Add the
onions, peppers, ginger, garlic and spices and cook for 5 minutes. Season with
freshly ground black pepper to taste.
Add the sweet potatoes and cook for 5 minutes more.
Add the tomatoes, green beans and vegetable broth and bring to a boil. Reduce
heat and simmer for 20 minutes, or until sweet potatoes are tender when pierced
with a fork.
Stir in the peanut butter and simmer until heated through. Serve immediately.
