Cod With Sautéed Mushrooms
Ingredients:
4 cod fillets
1 tablespoon lemon juice
1/4 teaspoon dill
2 tablespoons butter
1/2 cup chopped mushrooms
3 tablespoons heavy cream
1 tablespoon dried or fresh parsley
Freshly ground black pepper, to taste.
Directions:
Preheat the oven to 400 degrees. Spray a 9”x13” baking pan with non-stick
cooking spray. Place the fish in the pan. Bake 8-10 minutes, or until firm and
white.
Melt the butter in a small skillet. Add the mushrooms and sauté 5 minutes, or
until tender. Add the heavy cream and heat to warm, but do not boil. Season with
freshly ground black pepper to taste.
To serve, place a fillet on each plate and drizzle the mushrooms and cream over
the fish. Top with dried parsley.

Such a simple thing, but it makes all the difference. Hollandaise sauce needs to be
served warm, and should be made right before serving it—but it goes together in a
snap to give this salmon a creamy finish.
