Sunday Pork Roast

Ingredients:
2 tablespoons butter
1 3-pound, free-range, organic pork roast
1/2 teaspoon thyme
1/2 cup apple juice
Freshly ground black pepper, to taste

Directions:
Heat the butter in a medium skillet. Add the pork roast and brown the meat on
each side to form a savory crust. Transfer the roast to a slow cooker and season it
with the seasonings. Add the apple juice and cook on low for 6-8 hours, or until
very tender. Season with freshly ground black pepper to taste.
Serve hot.

sweet, it pairs well with a variety of ingredients. When buying pork tenderloin, look
for pork that is light pink with a firm texture. Avoid those that have liquid pooling
in the tray or seem spongy. Serve this dish with roasted sweet potatoes and Brussels
sprouts.
