Zesty Meatloaf
Zesty Meatloaf
Ingredients:
2 strips bacon, diced
1/2 cup diced onion
1/2 cup diced red bell pepper
1 pound free-range, organic, grass fed ground beef
1 large, cage free, organic egg
2 tablespoons potato starch
1/2 cup natural ketchup
1 teaspoon mustard
1 tablespoon maple syrup
Freshly ground black pepper, to taste
Directions:
Preheat the oven to 375 degrees. Heat a skillet over medium heat. Add the
bacon and cook for 4-5 minutes, or until brown and crisp. Transfer to a plate
with a slotted spoon. Cook the diced onion and pepper in the bacon drippings
until tender.
Combine the ground beef, egg, seasonings and potato starch in a medium bowl.
Add the bacon, onions and vegetables and stir gently to mix. Season with freshly
ground black pepper to taste. Pour the mixture into a loaf pan.
In another bowl, stir the ketchup, mustard and brown sugar together. Pour this
mixture over the meatloaf. Bake for 40 minutes, or until cooked through and
brown on top.
Tangy Marinated London Broil
