Spicy Southwestern Chicken Soup

Ingredients:
2 tablespoons butter
1/2 cup chopped onion
1/2 cup chopped red bell pepper
1/2 cup chopped zucchini
1 teaspoon minced garlic
1 (8-ounce) can roasted, chopped green chilies
1 (14-ounce) can diced tomatoes with chilies
4 cups chicken stock
2 cups shredded chicken
2 teaspoons cumin
2 teaspoons chili powder
1/2 teaspoon cayenne pepper
Freshly ground black pepper, to taste

Directions:
Melt the butter in a large stockpot. Add the onions, peppers, zucchini and
garlic and cook until tender.
Add the remaining ingredients and heat to simmering. Season with freshly
ground black pepper to taste. Simmer for 30 minutes and serve.
Not Your Grandma’s Minestrone
Serves 4
Traditional minestrone includes beans and pasta, but this version is a hearty
vegetable soup. Choose high-quality cuts of beef stew meat, and use homemade beef
stock if possible. Commercial varieties are loaded with sodium and MSG.
