Soft-Boiled, Poached and Fried Eggs

Ingredients:
4 very fresh eggs
Salt
Splash of white wine vinegar
Butter or olive oil
Pepper

Directions:
1. Soft-boiled: Half-fill a pan with water and bring to a boil. Add a pinch of salt (this keeps the white from leaking if the shell cracks). Lower in the eggs with a spoon and cook for 4 to 5 minutes.
2. Poached: Bring a large pan of water to a boil, add a pinch of salt and a splash of white wine vinegar (to help bind the egg white) and reduce to a gentle simmer. Crack a very fresh egg into a small bowl, swirl the water and slip in the egg. Cook for 3 minutes, then lift out with a slotted spoon.
3. Fried: Melt a pat of butter or a splash of olive oil in a frying pan over medium heat. Crack in an egg and fry for 5 to 6 minutes, or until the white has firmed. For "over easy," flip and cook 30 seconds more.
4. Season and serve hot.
