Peach-Cherry Cobbler
Peach-Cherry Cobbler
Ingredients:
4 large peaches, sliced with skin on
1 package (12 ounces) frozen dark sweet cherries, thawed and drained (1½ cups)
3 tablespoons honey, divided
4 teaspoons cornstarch
½ teaspoon ground ginger
¾ teaspoon ground cinnamon, divided
¾ cup gluten-free oat flour
¾ cup almond flour
1 teaspoon gluten-free baking powder
1 large egg, lightly beaten
3 tablespoons melted coconut oil
Directions:
Preheat the oven to 375°F.
In an 8" × 8" baking dish, combine the peaches, cherries, and 1 tablespoon of the honey. Sprinkle with
the cornstarch, ginger, and ¼ teaspoon of the cinnamon. Toss gently to blend the cornstarch with the
fruit.
In a medium bowl, whisk together the oat flour, almond flour, baking powder, and remaining ½
teaspoon cinnamon. Add the egg, oil, and remaining 2 tablespoons honey and mix well. Spread the
topping over the fruit. (It will not cover it completely.) Bake for 20 minutes, or until bubbling and a
wooden pick inserted in the topping comes out clean. Serve warm.
Makes 6 servings
Pineapple Bars
Bar cookies make great snacks for lunch boxes or after-school treats. These are made with
pineapple and sweetened with honey, a change from other bar cookies.
TOTAL TIME: 1 HOUR + CHILLING TIME
