HARVEST EATING TOMATO SAUCE

Ingredients:
¼ cup extra-virgin olive oil
¼ cup minced onion
6 garlic cloves, sliced
1 sprig fresh rosemary
1 sprig fresh thyme

Directions:
1 (28-ounce) can organic whole peeled tomatoes
Kosher salt, to taste
A few twists of freshly ground black pepper
Dash red pepper flakes (optional)
Dash of heavy cream (optional)
1. Heat the oil in a sauce pot over low heat. Add the onion, garlic, rosemary, and
thyme.
2. Simmer slowly for 10 minutes. Place the tomatoes in a food processor or blender
and pulse 2 times. Add them to the sauce pot.
3. Season the sauce with the salt and pepper. If you are using the optional red pepper
flakes or heavy cream, add them to the sauce. Increase the heat to high and bring the
sauce to a boil. After it boils, remove the sauce from the heat. Do not overcook.

Compound butters can bring a lot of flavor to a dish. This is a very simple recipe
that I like to make with fresh thyme, rosemary, and parsley. However, it can be
made with chives, cilantro, oregano, chervil, or other herbs. Get creative with this
recipe.
