TIA MARIA’S PEANUT BUTTER BALLS

Ingredients:
2 cups whole rolled oats ½ cup ground rolled oats
3 tablespoons ground organic golden flax seeds
1 cup dried fruit, such as raisins, cranberries, cherries or apricots
¼ cup organic coconut flakes
1 teaspoon vanilla extract
½ cup sunflower seeds
½ cup ground almonds
¼ cup pure olive oil
1 cup organic peanut butter
¼ cup honey

Directions:
1. Place the first nine ingredients in a large work bowl (everything except peanut
butter and honey).
2. In a small saucepan, heat the peanut butter and honey over medium-low heat until
they become very viscous, about 5 minutes.
3. Add the warm peanut butter and honey mixture to the dry ingredients and mix well.
4. Mold the peanut butter mixture into balls the size of golf balls. For best results,
refrigerate for 20 minutes before serving. Store them in an air-tight container in the
refrigerator.
Chef’s Note: Be sure to use organic peanut butter or Valencia peanut butter,
which is low in pesticide residue. Also, be sure the nuts and dried fruit are fresh.
These peanut butter balls are great for hiking or a natural snack for kids.

This is a simple and delicious French-inspired dessert that classically is made with
cherries that are very plentiful in central France. A simple batter is all that’s
needed to perfect this dish. It goes well with a sweet white wine from the Alsace
region of France.
