Spiced Apple Pork Roast
Spiced Apple Pork Roast
Ingredients:
1 cup applesauce
½ cup brown sugar (packed)
2 teaspoons vinegar
1 teaspoon Dijon mustard
⅛ teaspoon ground cloves
1 tablespoon all-purpose flour
½ teaspoon salt
¼ teaspoon sugar
⅛ teaspoon garlic powder
⅛ teaspoon freshly ground black pepper
4 pounds boneless pork roast
Directions:
1. Preheat the oven to 350°F.
2. Stir together the applesauce, brown sugar, vinegar, mustard, and cloves in a small
bowl; refrigerate until ready to use.
3. Combine the flour, salt, sugar, garlic powder, and pepper in another small bowl.
4. Rub flour mixture over the surface of the pork. Place the pork roast on a rack in a
shallow roasting pan.
5. Roast, uncovered, until the internal temperature is 140°F. It will take about 2½
hours.
6. Spoon half of the reserved applesauce mixture over the roast and continue roasting
until the internal temperature reaches 155°F, about another 30 minutes. (The rule
for cooking pork is 18 to 20 minutes per pound.)
7. Transfer the roast to a serving platter; cover with foil and let stand for 15 minutes
before slicing.
8. Heat the applesauce in a small saucepan over mediumhigh heat until boiling; boil
for 1 minute. Spoon the heated applesauce mixture over the pork slices before
serving.
BLACK BEAN AND CHORIZO EMPANADAS

Empanadas are a delicious stuffed Latin-style pastry. This empanada is made with
chorizo and black beans. These cook up rather quickly and have boat loads of
flavor.
MAKES 10 SERVINGS
2 tablespoons pure olive oil
2 (6-inch) chorizo sausages (casings removed)
