ROASTED LOCAL SWEET CORN
ROASTED LOCAL SWEET CORN
Ingredients:
5 ears local sweet corn, husked and silks removed
⅛ cup pure olive oil
¼ teaspoon kosher salt
⅛ teaspoon freshly ground black pepper
Directions:
Pinch of chili powder (optional)
1. Preheat the oven to 375°F.
2. Combine the corn, oil, salt, pepper, and chili powder in a large plastic bag and
gently shake to coat.
3. Place the corn in a roasting dish and cook in the oven until the ears begin to get
some color, about 15 minutes.
4. Enjoy on the cob or remove the kernels and use for salads, cornbread, or sautéed
dishes like pasta.
Chef’s Note: You can use any spice you like, such as herbs de Provence or
garlic powder, to season the corn.
