Ingredients:
1 pound (455 g) salted butter, softened In the bowl of a standing mixer, beat together all ingredients with the
2 tablespoons (28 g) black truffle paddle attachment. Use immediately or package for longer storage.
Directions:

LIVER + PEA + SAGE
Liver has a strong, unique flavor; some think they don’t like it, but that impression
usually comes from eating some that was poorly prepared. At its best, it is silky, rich,
and wonderfully complemented by the sweet, vegetal pea and herb-forward sage.
For a simple preparation of the combination, sauté the liver with fresh peas and a
sprinkle of chopped sage. The application recipe takes the refined route, preparing layers

LIVER

The world of peas includes the shelled variety (with inedible pods) and pod peas, which
you can eat the whole (sugar snap peas are an example). For this combination use
shelled peas. Don’t even get close to canned peas, but keep a stash of frozen around
