Potato Masher

Ingredients:
10oz fresh or frozen blueberries
If frozen must be thawed prior to preparation
1lb of fresh or frozen peach slices
If frozen must be thawed prior to preparation
¼ cup apple juice
½ cup almonds
1 cup pitted dates
2 tablespoons apple juice
½ tsp cinnamon
Kitchen Items Required:
9 × 9 Glass Baking Dish
Blender / Food Processor
Strainer - to strain frozen fruit
Other Options to Consider: If you are allergic to almonds feel free to substitute for any
other nut you like or are not allergic to.
Steps:
1. Preheat oven to 350 degrees.
2. Place blueberries in the bottom of a square 9 × 9 inch glass baking dish. If you are
using frozen fruit, make sure it is completely thawed and drained of excess water.
3. Place peach slices on top of blueberries. If they are frozen make sure they are also
thawed and drained of excess water.
4. Drizzle ¼ cup apple juice over fruit.
5. Make sure you purchase the pitted dates, these are the dates with the pits removed. If
the pits are still inside the dates, remove them and then place the dates in a food
processor or blender with the cinnamon, almonds and remaining apple juice.
6. Process for a minute, or until the dates are blended with apple juice.
7. Place mixture evenly over peaches and blueberries, and bake uncovered for about 45
minutes.
8. Serve warm or cool.

really simple to make and the kids love helping on this one.
