Boca Burgers and Mashed Sweet Potatoes

Ingredients:
Enough Boca veggie burgers for everyone – make sure whatever soy burgers you use
they say non-GMO on the package
4 – 6 sweet potatoes diced (depending on how many you are serving)
2 big spoonful’s of soy butter
1 cup of almond milk
Sea salt / Real salt, garlic powder, cinnamon to taste
All the fixings for burgers – lettuce, sliced tomatoes, sliced red onions, sliced
avocado, pickles, ketchup, and mustard
Kitchen Items Required:
Steaming Pot
Knife
Cutting Board
Cookie Sheet
Potato Masher
Bowl
Other Options to Consider: Instead of almond milk use any other nut milk you would
like. You can also use Boca chicken patties for this meal if you would like. Or use beef or
chicken burgers – just be sure they are hormone and antibiotic free meats. Also if you like
to garnish, cilantro is a great garnish for the sweet potatoes.
Salad Option to Consider: We love the Broccoli Bean salad on with this meal.
In addition, for this meal we always make up a nice plate of burger fixings and let
everyone dig in. Fresh pieces of lettuce, sliced tomatoes, sliced red onion, sliced avocado
and pickles.
Steps:
1. Get all ingredients and kitchen items required on the counter.
2. Pre-heat oven to 350 degrees.
3. Clean and dice sweet potatoes with the skins still on.
4. Add to steaming pot with 1 – 2 inches of water (use 9.5 alkaline water if you have a
water machine).
5. Put on medium high heat and steam for 15 minutes or until sweet potatoes are soft.
6. While sweet potatoes are cooking put veggie burgers on the cookie sheet and bake in
oven on 350 degrees for 8 minutes on each side.
7. While the burgers are baking prepare your salad and burger fixings plate.
8. When sweet potatoes are done add them to a bowl and use a potato masher to mash
them.
9. Add soy butter and cover bowl for a few minutes while soy butter melts.
10. Add almond milk to potatoes and soy butter, use potato masher to mix thoroughly.
11. Add sea salt / Real salt, garlic powder and cinnamon to taste stir thoroughly and
enjoy!
12. When burgers are done have everyone use the burger fixings to fix up their own
burger – sometimes the kids just eat the vegetables on their own. It is such a fun meal
for everyone.
13. Cleanup consists of cookie sheet, steaming pot and bowl.
Cauliflower Mashed Potatoes
This is a nice alternative if you do not want to eat potatoes but you still want the taste and
texture of them. Using cauliflower in place of potatoes is a popular alternative.
