Veggie Burgers and Mashed Sweet Potatoes

Any nut milk works. Beef or chicken burgers can replace the veggie burgers. Garnish the sweet potatoes with cilantro if you like.

Ingredients:
Veggie burgers, enough for everyone
4 to 6 sweet potatoes, diced, skins on
2 heaping spoonfuls plant-based butter
1 cup almond milk
Sea salt, garlic powder and cinnamon
Burger fixings: lettuce, sliced tomatoes, red onions and avocado, pickles, ketchup and mustard

Directions:
1. Preheat the oven to 350°F.
2. Steam the sweet potatoes over 1-2 inches of water on medium-high heat until soft, about 15 minutes.
3. Meanwhile, bake the burgers on a baking sheet 8 minutes per side.
4. Mash the sweet potatoes in a bowl. Add the butter, cover a few minutes to melt, then mash in the almond milk.
5. Season with salt, garlic powder and cinnamon.
6. Serve the burgers with the fixings and the sweet potatoes.
