Noodles and Bok Choy
Noodles and Bok Choy
Ingredients:
1 head of bok choy
3 small bags of udon noodles
1 package of firm tofu
Olive oil
Bragg’s liquid aminos
Vegetable broth
Sea salt / Real salt to taste
Kitchen Items Required:
Salad Spinner
Steaming Pot
Knife
Cutting Board
Other Options to Consider: Honestly cannot think of anything I would do different here.
Obviously if you do not like tofu you can swap it out but with this recipe the tofu tastes
delicious so if you have never tried tofu this might be the recipe to try it out on.
Salad Option to Consider: The Chinese Salad on or the Cabbage Salad on would be great with this meal.
Steps:
1. Chop and clean your bok-choy using the salad spinner.
2. Add to steaming pot with 1 – 2 inches of water at the bottom (use 9.5 alkaline water
if you have a water machine).
3. Turn on medium high heat.
4. Drain and dice the tofu and add to the top of the bok choy steaming – steam them
both together.
5. While the food is steaming rinse out the salad spinner, clean the knife and cutting
board.
6. After 12 – 15 minutes the bok choy / tofu should be done – remove the steaming
insert with the bok choy and tofu in it and set it aside.
7. Dump the water and rinse the pot.
8. Put pot back on the stove and add the noodles and enough vegetable broth to cover
the bottom of the pot.
9. Let the noodles steam in the vegetable broth for a few minutes.
10. Add the Bok Choy and tofu to the pot with the noodles.
11. Season with olive oil, Bragg’s Liquid Aminos and sea salt / Real salt to taste, mix
well and enjoy!
12. Only thing left to clean is the steaming pot – hurray!
Sausage and Squash
This is such a great meal to prepare when you do not have a lot of time to spend in the
kitchen. You do have to be prepared for this meal however as it requires you buying some
key ingredients ahead of time. This dish also makes great leftovers.
Prep / Cooking Time: 15 minutes to prep, 40 minutes to cook
