Italian Salad
Italian Salad
Ingredients:
1 head of lettuce cleaned and cut – you can mix up the taste of this salad by using
different types of lettuces each time
Green leaf or red leaf lettuce
Butter lettuce
Romaine lettuce
Spinach
Or you can also use boxed pre-cleaned mixed lettuce
1 English cucumber diced (long skinny one wrapped in plastic)
2 tomatoes diced / 1 container of grape tomatoes sliced
6 – 8 artichoke hearts chopped
Olive oil to taste
Sea salt / Real salt and pepper to taste
Dried oregano and parsley to taste
Kitchen Items Required:
Salad Spinner which also acts as salad bowl
Knife
Cutting Board
Other Options to Consider: If you are looking for some extra protein you can add a can
of beans to this salad. When we do that we usually use great northern beans. If you want
to add even more Italian to this salad consider slicing some olives (black or green), adding
red onions and even some pepperoncini.
Steps:
1. Chop and clean lettuce using salad spinner or just add lettuce to bowl from pre-
cleaned box. Use the salad spinner bowl as your salad bowl to save on dishes.
2. Clean and dice cucumbers and tomatoes and add them to bowl.
3. Chop and add artichoke hearts to bowl.
4. Add olive oil, sea salt / Real Salt, pepper, oregano, and parsley to taste – mix well
and enjoy!
5. Store in an airtight container in the refrigerator for up to three days.
Quinoa Salad
This is a slight variation on the cucumber, tomato salad. With the addition of the quinoa
and the beans this is a salad packed with protein. It tastes good warm or cold and makes a
great snack.
Prep Time: 10 minutes.
