Chinese Salad

Ingredients:
1 head of lettuce cleaned and cut – you can mix up the taste of this salad by using
different types of lettuces each time
Green leaf or red leaf lettuce
Butter lettuce
Romaine lettuce
Spinach
Or you can also use boxed pre-cleaned mixed lettuce
1 English cucumber diced (long skinny one wrapped in plastic)
2 tomatoes diced
2 carrots peeled
2 celery stalks diced
2 – 3 large handfuls of shelled edamame – previously frozen
Sesame oil / olive oil to taste
Sea salt / Real salt to taste
Kitchen Items Required:
Salad Spinner which also acts as salad bowl
Knife
Cutting Board
Small Pot for thawing edamame
Potato Peeler
Other Options to Consider: If this salad does not have enough flavor for you, consider
adding the Bragg’s Liquid Aminos to it. You never can go wrong with the Bragg’s.
Steps:
1. Start by taking your edamame out of the freezer and adding it to a small saucepan
with some water. Put it on stove medium high heat until it comes to a nice simmer.
Let simmer for a few minutes then drain and let cool.
2. While edamame is cooking, chop and clean lettuce using salad spinner or just add
lettuce to bowl from pre-cleaned box. Use the salad spinner bowl as your salad bowl
to save on dishes.
3. Clean and dice cucumbers, tomatoes and celery, add them to bowl.
4. Peel initial skin off of carrot and then continue peeling carrots directly into the bowl.
5. When edamame are cooled add them to bowl.
6. Add sesame oil / olive oil and sea salt / Real Salt to taste – mix well and enjoy!
7. Store in an airtight container in the refrigerator for up to three days.
Italian Salad
This is the salad I grew up eating. The only variation is we do not use vinegar in this
recipe like I used to. Vinegar is very acidic and it holds fat. If you are trying to lose weight
try to avoid vinegar all together. If you are fine with your weight use vinegar in
moderation. We think you will find that the salad will be so great without the vinegar you
will not even miss it.
