Classic Sloppy Joes
Ingredients:
4 tablespoons olive oil
2 onions, peeled and thinly sliced
1 clove garlic, minced
1 pound 85/15 ground beef
1 pound ground pork
Directions:
1⁄ cup apple cider vinegar

1⁄ cup tomato paste
2
1⁄ teaspoon salt
4
1⁄ teaspoon black pepper

Quick Tomato Peeling
Not everyone likes peeled tomatoes. Sometimes the presence of the peels adds just a bit more color and
texture. But if you do peel, there is a helpful trick. Arrange the tomatoes in a bowl. Cover them with boiling
water for 2 minutes, then drain. This will loosen the skins for easier peeling.
1. Heat the oil in a large skillet over low heat. Sauté the onions in the skillet over low
heat until soft, about 12–15 minutes. For the last 2 minutes of cooking, add the garlic.
Stir until cooked and fragrant. Transfer to the slow cooker.
2. Brown the meat in the same pan over medium heat, breaking into chunks; drain. Add
the meat, vinegar, tomato paste, salt, and pepper to the slow cooker.
3. Cover and heat on a low setting for 3–4 hours.
Beef Stew
This dish is great to come home to on a cold wintry night. It’s very simple, and you
can set it to cook and leave it alone until it’s done.
