Deli Roll-Ups

Ingredients:
1 cup chopped baby spinach
1 red bell pepper, sliced

Red peppers contain more carbohydrates than green peppers. If you need to reduce the carbohydrate
content for this recipe, you can swap out the red pepper for a green one.
1. Lay out each slice of ham flat. Take 1 tablespoon of cream cheese and spread it on a
slice of ham. Repeat for the remaining slices.
2. Put 2 tablespoons of chopped spinach on top of the cream cheese on each slice.
3. Divide bell pepper into 8 equal portions and put each portion on top of spinach.
4. Roll up the ham and secure with a toothpick. Eat immediately or refrigerate until
ready to serve.
Ham and Cheese Casserole
Allow the cream cheese to reach room temperature before starting this recipe.
Softened cream cheese is much easier to work with than cream cheese fresh
from the fridge.

Corralling Coconut Cream
Coconut cream is the solid portion of the coconut milk you buy in a can. You can easily separate the
cream from the milk by refrigerating a can of full-fat milk for a few hours. When it’s chilled, open the can
and scoop out the solid part on top—this is the coconut cream and the part that contains most of the fat.
