VERDE SAUCE
VERDE SAUCE
Ingredients:
8 tomatillos, husked
1 medium onion, chopped
1 jalapeño pepper (remove the seeds for less heat)
3 garlic cloves, chopped
½ cup chopped fresh cilantro
Directions:
1½ tablespoons fresh lime juice (from 2 limes)
Salt and freshly ground black pepper
1 In a pot of boiling water, cook the tomatillos, onion, jalapeño, and garlic for
about 8 minutes, or until the tomatillos soften. Strain and reserve the cooking
liquid.
2 Put the strained veggies and the cilantro in a blender or food processor and
pulse a few times. With the machine running, add the reserved cooking liquid ½
cup at a time until the sauce is the consistency of thick salsa. Add the lime juice,
then season with salt and pepper to taste.
3 Transfer to a large bowl and serve immediately.
FREEZES WELL! For best results, let the salsa thaw in the fridge and
allow to come to room temperature before using.

minute short, and it’s soggy; a minute extra, it can be sticky and clumped together.
Unless you want to spend your hard-earned money on a rice steamer, we suggest you
follow this tried-and-true method. Makes 3 cups
