One Pot Kielbasa Dinner

Ingredients:
2 cups dried rotini or rotelle pasta (about 6 ounces)
1 tablespoon olive oil
1 medium yellow onion, cut into wedges
1 pound cooked kielbasa, halved lengthwise and sliced diagonally
2 cloves garlic, minced
1 small zucchini, cut into matchstick-size strips
1 yellow or orange pepper, seeded and diced
1 teaspoon dried Italian seasoning, crushed

Directions:
Pinch cayenne pepper
8 Roma tomatoes (about 1 pound), cored and chopped
Salt and freshly ground black pepper to taste
1. Cook the pasta according to the package directions. Drain, set aside, and keep
warm.
2. Wipe out the pan, add the oil, and bring to temperature over medium-high heat.
Add the onion and sauté for 1 minute. Add the kielbasa, stirring often to keep the
onion from burning. Cook for 5 minutes, or until the onion is transparent. Add the
garlic and sauté for an additional 30 seconds. Stir in the zucchini, yellow or
orange pepper, Italian seasoning, and cayenne pepper; cook and stir for 5
minutes. Stir in the tomatoes and cooked pasta. Cook until heated through, stirring
occasionally. Taste for seasoning and add salt and pepper, if desired.
SHRIMP AND FETTUCCINE
You can cut some of the fat in this dish by using 1 cup of evaporated skim milk
instead of the chicken broth and heavy cream. Pattypan squash is a small summer
squash with lovely scalloped edges.
