SAUTÉED OKRA AND TOMATOES
Ingredients:
1 pound okra pods, stemmed and sliced into rings
3 tablespoons vegetable oil
1 small yellow onion, chopped
3 large fresh tomatoes, seeded and chopped
2 garlic cloves, minced
1 tablespoon apple cider vinegar
Directions:
Salt to taste
Pepper to taste
1. Wash the okra pods, cut off the stem ends, and slice the pods into 1⁄" slices. Pat

them dry to prevent oil splatters. Place a skillet over medium-high heat. Once it
is heated, add the oil, onion, and okra. Cook them for several minutes on each
side. The onion should be golden brown about the same time that the okra is
crispy on the cut sides.
2. Add the tomatoes and garlic, stirring continually for 2–3 minutes, or just until the
tomatoes are cooked through. Pour into a bowl and sprinkle with the apple cider
vinegar. Stir to combine and taste before adding salt and pepper.
SAUTÉED RADISHES WITH SCALLIONS
Radishes are members of the mustard and horseradish family. Their pungent flavor
turns off many people, but when cooked their flavor becomes very mild.
Yields 4 servings
