Fried Okra

Fried Okra

Ingredients:
3 large eggs
1 pound fresh okra (whole)
2 cups all-purpose flour
1 cup fine yellow cornmeal
2 teaspoons mild paprika

Directions:
Kosher salt and freshly ground black pepper to taste
5 cups vegetable oil
1. In a medium bowl, lightly whisk the eggs. Add the okra and stir until it is well
coated with the beaten egg.
2. In a resealable plastic bag, combine the flour, cornmeal, paprika, salt, and pepper.
Shake well.
3. In a large, deep frying pan, heat the oil over medium heat to 350°F.
4. Place the okra, a few pieces at a time, into the resealable plastic bag and shake until
the okra is completely coated with the flour mixture. Carefully transfer the okra to the
hot oil and cook over medium for about 5 minutes or until golden brown. Remove the
okra to a paper towel–lined plate. Repeat this process with the remaining okra.
BRAISED KALE WITH GARLICKY TURNIPS
Kale is a great source of vitamins and other nutrients, and combining it with turnips
seems to bring out the best flavor in both vegetables. When choosing turnips, always
choose the smaller ones, which are sweeter and more delicate than the older ones.
