Roasted Cuban Bread

Ingredients:
¼ cup grated Parmesan cheese
3 tablespoons minced fresh cilantro, for garnish
¼ cup julienned fresh basil, for garnish

Directions:
1. Do ahead: Combine all the marinade ingredients in a blender and process until
smooth. Refrigerate in a tightly covered container until ready to use. One hour
before serving, pour the marinade over the sliced tomatoes in a bowl and set
aside.
2. Do ahead: Combine all the ingredients for the garlic-herb butter and mash with
a fork to make sure everything is well blended. Refrigerate in a tightly covered
container. Let it sit out for an hour or two to soften before using.
3. Light a charcoal grill or preheat the oven to 450°F. Center a rack in the middle
of the oven.
4. Cut the bread in half lengthwise and spread the garlic-herb butter over both of
the cut surfaces. Place, cut side down, on the grill, or lay cut side up on a baking
sheet. Grill the bread for 3 to 4 minutes, or bake in the oven until lightly toasted.
5. Arrange the marinated tomatoes in an overlapping style down the length of
each of the halves of bread, sprinkle with the Parmesan cheese, and grill or bake
until the cheese is melted.
6. Slice each half into 8 portions and garnish with the chopped cilantro and basil.
Serve warm.

Use a thick loaf of French or Italian bread if you can’t find the Cuban bread.
Cuban bread is very similar to French and Italian bread. It’s usually baked with
a split down the middle and is noted for its crispy crust.
