1/2 pound bulk luganega, cotechino, or other raw Italian sausage
1 medium onion, diced
2 garlic cloves, minced
2 carrots, diced
4 cups firmly packed thinly sliced green cabbage
5 cups Chicken Stock or purchased stock

1 (14.5-ounce) can diced tomatoes, undrained
