Toad-in-the-hole

Ingredients:
2 medium eggs
600 ml milk
8 thick pork sausages

Directions:
1. Preheat the oven to 220ºC (Gas 7). Grease a large roasting dish with lard.
2. To make the batter, sift the flour and salt together into a mixing bowl and blend in the
eggs with a wooden spoon. Gradually whisk in the milk, taking up the flour and egg
mixture, and continue whisking for a few minutes. Leave to stand while you prepare the
sausages.
3. Lightly brown the sausages in a frying pan then transfer to the greased dish. Put the dish
in the oven for 3–4 minutes, then remove from the oven and pour over the batter.
4. Bake immediately for 25–30 minutes then reduce the heat to 200°C (Gas 6) if the batter
seems to be cooking too quickly round the edges. The dish is cooked when the batter has
risen and is deep golden in colour.

One of the best uses for sausage meat – you simply can’t beat a sausage roll! It is
essentially sausage meat wrapped in rough puff pastry.
