Cherry or Mandarin Delight

A low-GI pudding: the beans, cottage cheese and yogurt offset the higher-GI ingredients.

Ingredients:
1 (410 g) tin small white beans
1/2 packet boudoir biscuits (ladyfingers)
50 ml sherry (optional)
250 g low-fat cottage cheese
250 ml plain low-fat yogurt
1 packet vanilla instant pudding
1 (410 g) tin cherries in syrup or mandarins
10 ml gelatin

Directions:
1. Mash the beans or process in a food processor until smooth, but not longer than 3 minutes.
2. Arrange the biscuits in a single layer in a glass serving dish. Sprinkle with sherry, if using.
3. Beat the beans, cottage cheese, yogurt and instant pudding together with a hand whisk or beater.
4. Spread evenly over the biscuits and refrigerate until set.
5. Drain the fruit, reserving the syrup; halve the cherries and arrange over the set pudding.
6. Stir the gelatin into the syrup over low heat until dissolved. Cool in a bowl of iced water.
7. When cool to the touch, pour over the pudding and refrigerate until set.

Tip:
Don't beat or process for too long, as it raises the GI; keep each step to 1-2 minutes.
