Buckwheat Pancakes With Fruit Sauce

Ingredients:
3 apples, pears, or plums, cored and sliced
⅓ cup pure maple syrup
1 cup buckwheat flour
⅓ cup brown rice flour
2 Tbsp brown sugar
1 tsp baking powder
½ tsp baking soda
½ tsp salt
½ tsp ground cinnamon
¾ cup milk
2 Tbsp canola oil
2 eggs

Directions:
1. Coat nonstick skillet with cooking spray and heat over medium heat. Add apples and cook, turning,
for 5 minutes, or until just tender. Add syrup and reduce heat to low to keep warm.
2. In large bowl, mix together flours, sugar, baking powder, baking soda, salt, and cinnamon. In
measuring cup, whisk together milk, oil, and eggs. Stir into flour mixture just until blended.
3. Coat griddle or nonstick skillet with cooking spray and heat over medium heat. Drop 2 Tbsp batter
onto griddle to form pancake. Cook for 3 minutes, or until browned on bottom and bubbles form on
top. Turn and cook for 3 minutes, or until browned on bottom and firm to the touch. Place on plate and
cover to keep warm. Repeat with remaining batter. Serve with fruit syrup.
