Did you know that…
According to legend, also told by Pellegrino Artusi in his La scienza in
cucina e l’arte di mangiar bene (1891), the name arista means loin
of pork with the sirloin attached to the bone—a cut of meat that is
often used in Tuscany for roasts, flavored with garlic, rosemary, and
pepper. The name originated in Florence in 1439 when the Ecumenical
Council of the Greek Orthodox Church and the Roman Catholic Church
convened, organized by Cosimo the Elder. During one of the banquets,
Cardinal Basilio Bessarione exclaimed the following of the excellent
roast loin of pork: “Aristos, aristos!” meaning in Greek “The best, the
best!” The Florentines present at the lunch liked this name and decided
to use it for this cut of meat. However, there is a Florentine document
dating back to 1287 that makes a reference to an “arista di porcho,”
and Franco Sacchetti writes about “un’arista al forno” in his novel writ-
ten at the end of the 14th century. Arista can be eaten roasted, but it
can also be eaten cold, especially in summer: It is sliced very thin and
