Homemade Greek-Style Yogurt

Homemade Greek-Style Yogurt

Ingredients:
· 1/2 gallon 2 percent milk
· 1 cup powdered milk (this is optional but does make the yogurt thicker)
· ½ cup live yogurt culture (can use regular plain yogurt)
· Thermometer
· Small blanket
· Cheesecloth for straining

Directions:
1. Pour milk into slow cooker. Stir in powdered milk. Heat the milk in the slow
cooker on high until it reaches 180 degrees F (about 1-2 hours depending on your
cooker). Turn off slow cooker and let milk cool to 110 degrees F. Stir in live yogurt
culture and mix until completely blended. Wrap the slow cooker (which is turned
off) in a blanket to keep the heat in. Let sit for 6-8 hours.
2. Take lid of slow cooker. To make thick, Greek-style yogurt you will need to drain
the whey (the liquid on top of the yogurt) out of the yogurt. To do this, place a few
layers of cheesecloth in a colander. Place the colander over a large bowl. Add the
yogurt to the colander and let it drain in the refrigerator for a couple of hours until it
has reached the consistency you like. You now have delicious Greek yogurt!
3. Pour the yogurt into mason jars (or other containers) and store in the refrigerator for
7-10 days.
