Annie Mae Jones' Buttermilk Biscuits

Ingredients:
• 3 cup Flour,all-rationale,sifted
• 2/3 cup Shortening
• 1 tsp Salt
• 1 cup Buttermilk
• 1/2 tsp Baking soda
• 4 tbsp Butter (opt)
• 3 tsp Baking powder
• 1. Preheat oven to 450'F.
Instructions:
1. 2. Sift flour, salt, soda, and baking powder into mixing bowl. Cut in just shortening, getting 2 knives, a pastry cutteror your palms dusted with flour.
2. Cover enough buttermilk to create a tender dough. Knead lightly and switch out on to a lightly floured board.
3. Roll out to 1/2" thickness and lower with biscuit cutter into rounds. Area rounds not touching - for crisper biscuitsp - or finish collectively - for softer biscuitsp - on ungreased baking sheet.
4. Brush with melted butter if most popular and bake in just preheated oven 12-15 minutes, or until company and lightly browned.
