Blackened Rainbow Trout

Ingredients:
4 Rainbow trout fillets
1/2 cup of unsalted butte r
1 tablespoon of paprika
2 1/2 teaspoons of salt
1 teaspoon of cayenne pepper
3/4 teaspoon of white pepper
3/4 teaspoon of black pepper
1/2 teaspoon of thyme
1/2 teaspoon of oregano
1 teaspoon of onion powder
1 teaspoon of garlic powder
Preheat large, heavy skillet until very hot. Combine paprika ,
salt, onion powder, garlic powder, cayenne pepper, white pepper,
black pepper, thyme, and oregano in a small bowl. Dip fillets i n
melted butter, then in seasoning mixture. Place in hot skille t
and cook 2-3 minutes on each side until blackened .

Basic Hush Puppies
2 cups of self-rising cornmeal
1/2 cup of flour
1 egg
1 Tablespoon of lard (cooking oil can be substituted )
1 large onion, finely chopped
1 cup of milk
Mix ingredients. The consistency should be similar to peanut butte r.
Deep fry teaspoon-sized balls of the dough at moderate heat (300F )
until golden brown .
